Hokkaido's twist on "Prosciutto e Melone": a delicate harmony of sweet, ripe melon sauce and savory "Tokishirazu" summer salmon. Presented under a glass cloche, the gentle smoky aroma elevates this exquisite pairing.

Main: Venison Cartoccio

Mild, juicy summer venison grilled in bamboo leaves. The roasted aroma enhances its savory depth, perfectly paired with an eggplant and venison ragout gratin featuring Farm Hoshino mozzarella.

Dolce: Melon Meringata
