the freezing winter seas of Hokkaido
Dinner Course
at OTTO SETTE TOMAMU
Introducing the winter dinner course at OTTO SETTE TOMAMU, the main dining restaurant at Hoshino Resorts TOMAMU. The concept of the restaurant is "Bella Combinazione," meaning "beautiful combination" in Italian. This winter, we offer a total of eight dishes featuring seasonal Hokkaido winter ingredients, including Horsehair Crab and Hanasaki Crab, served as traditional Italian regional cuisine. Available for both overnight guests and day-trippers, with reservations accessible on our official website.

Crab Wrapped in Bubbles
with the Refreshing Aroma of Finocchio
Seasonal crab is characterized by its shell packed densely with tender meat and rich tomalley. Flaked crab meat and sweet crab tomalley are elegantly presented in the crab shell, complemented by a smooth finocchio (fennel bulb) purée that enhances the entire dish with its refined aroma. Light kelp foam gently wraps the ingredients, allowing the rich savoriness of the crab and the refreshing scent of finocchio to fill your palate from the very first bite.

The moment you open the shell, the rich aroma of crab rises gently with the warm steam. This warm pasta dish features a rich sauce crafted by thoroughly simmering the meat, crab miso, and fragrant shell of the Hanasaki crab to bring out its full depth of flavor. The concentrated sauce and abundant crab meat wrap around the flat pasta, delivering a luxurious dish where the robust flavor of Hanasaki crab spreads through your mouth with every bite.

For the fish course, enjoy "Crab Involtini," featuring sweet scallops and sea urchin mousse wrapped in succulent crab meat and gently steamed to fluffy perfection. Hot olive oil poured over fresh basil and garland chrysanthemum creates an irresistible aroma and crackling sound that delights all five senses. The rich umami of steamed crab fills your mouth, complemented by a deep seafood broth that further enhances this luxurious creation.
